The Origin Of China Black Tea

The Chinese call it hong cha (red tea), but don't let the name confuse you. China black tea couldn't be any farther in both taste and color from what Westerners call "red tea" - roibboos tea.

Like all typical teas, China black tea comes from the leaves of the Camellia sinensis plant grown originally in the Yunnan Province of China and available only for export to the foreign markets. Today, China black tea is still a favorite among tea drinkers, especially the English where black tea is constantly the main ingredient in English tea breakfast.

The Chinese call it hong cha because of the color of the infused liquid and the red edges of the oxidized leaves. At one time, it is said that China black tea was considered of lesser quality and not desired by the Chinese themselves, and was therefore exported. This is probably why, to this day, black tea is what everyone outside of China thinks of when talking about tea, whereas, tea in China is understood to mean green tea. Regardless, the black teas of today have come a long way from being considered as low quality tea.

Antoher name for China black tea is Congous - its name in the international tea trade business. The name actually comes from the Chinese term gong fu or kung fu. Northern Congous are also referred to as Black Leaf Congous, "the Burgundy of China teas", and Southern Congous as Red Leaf Congous, "the Claret of China teas."

How to Make China Black Tea
The first step in making China black tea after plucking the leaves is to allow them to wither. Next comes rolling, the purpose of which is to break open the surface of the leaves and allow the remaining moisture or sap to escape and coat the surface of the leaves. This sap is what contains the polyphenols or tannins, which are said to be powerful antioxidants and give teas their health benefits.

After rolling, the leaves are exposed to the air and controlled conditions of heat and humidity to oxidize or ferment them. In the process, the polyphenols are oxidized as well and transform into compounds called theaflavins, which gives the leaves a bright coppery red color. Another chemical reaction occurs and the theaflavins form into another compound called thearubigins, which ultimately render China black tea its final dark brown or black color.


The theaflavins are also associated with the "brisk" flavor and brightness of China black tea. The thearubigins, on the other hand, are responsible for the tea's strength and color. After a few hours, when oxidation is complete, the aroma of China black tea changes from a "leafy" smell to a "fruity" one.

The last step is drying and firing. This is when China black tea is subjected to extreme heat - sometimes in an open fire - in order to change the color of the leaves to its characteristic black color.

Alaska is the top producer of wild, high-value salmon, producing nearly 80 percent of the world supply of king, sockeye, and coho. Each year, the salmon industry provides thousands of jobs and hundreds of millions of dollars to the state's economy. Commercial fishing is critical to communities and fishing
families throughout the state.

Alaska's fishing industry leads the state in providing 47% of private sector jobs, and is second only to the oil industry in providing revenue to the state. In 2002, the exvessel value for combined fisheries totaled $955 million with $162 million from salmon.

Salmon fishing permits are issued to individuals, not corporations, through the "limited entry permit system". The total number of available permits for each fishery is strictly limited. Fishermen may not own more than one salmon permit for the same gear type and area. This creates a fishery made up of many individuals and families.

Three main gear types catch Alaska salmon: trolling, gillnetting, and purse seining. All commercial salmon fishing boats are relatively small vessels; averaging 30 to 50 feet.

Trollers use long trolling poles to pull or troll 2 to 4 deep weighted lines through the water, each with 8 - 12 leaders attached. At the end of each leader there is a lure or baited hook. Boat size varies from small skiffs to vessels of 50 feet or more with most ranging between 25 to 40 feet.
Trollers primarily target king, coho, and pink salmon as they enter Alaskan waters on their way to the spawning grounds. Trollers catch a relatively low volume of high-quality fish. The fish they catch are bright and vigorous from fresh ocean waters. They are often
sold dressed, or filleted in the fresh or fresh frozen market.
Gillnetters set curtain-like nets in the water suspended from a float line at the surface and a weighted lead line along the submerged bottom edge. Nets vary in length from 900 to 1800 feet long. The net's mesh openings are just large enough to allow an adult fish head to get through and become entangled at the gills.

There are two types of gillnets; driftnets that are free floating from boats, and setnets that have one end attached to the shoreline. Boat size is limited to 32 feet or less in Bristol Bay; otherwise, the average range is 30 to 40 feet. Gillnetters primarily harvest sockeye, chum and coho.
Purse Seiners use a large floating net, pulled and set in circle by a power skiff, to surround schooling salmon. The weighted "purse line" at bottom of the net is drawn closed to contain the fish. The net full of fish is then gathered to the boat through a highpowered hydraulic block.

Purse seiners are not allowed north of the Alaska Peninsula; boat size is limited to 58 feet. Purse Seiners harvest mainly pink salmon near the shoreline and close to fresh water spawning grounds where runs are highly concentrated.

Organic Eating Habits - Are They Attainable For Children?

Some adults would say, "Well, of course they are" while others would retort, "you must not have children!" However it is possible to give them this healthy advantage but it does take some effort. Many parents have children that scream at the mention of vegetables let alone the sight, or smell. A majority of kids are raised on fast food that is full of unhealthy ingredients. Of course they are possibly given a cucumber here and there, but will only eat it when dipped in ranch dressing that is full of MSG. These unhealthy eating habits are detrimental to our children's health. These habits have to change.

There is hope however in getting junior to eat broccoli, request cauliflower, and get second helpings of stir fry. Here are a few tips for you parents who are striving to give your kids a healthy future. First off if you have an infant make sure to introduce him/her to the wonderful world of solids without offering them bites of fast food. If they don't taste it they won't miss it. I'm always shocked when I hear a parent say, "I was eating pizza and I gave my son a bite and he LOVED it." They say it as if it's a wonderful miracle that he liked it. What's happening is they are ruining his taste buds. He will become accustomed to the salty, fatty taste and when you try to offer him healthy foods that aren't laden with salt he will refuse. The same goes for sugar.

By the time the child is two these same parents are saying, "My child just doesn't like vegetables and there is nothing I can do about it". This is not true, however your road will be much harder. The second tip is to try and find foods that are similar to the ones they are used too your. Many of their favorite snacks can be found in your nearest health food store or online, only a healthier version. Look for snacks that aren't sugar laden and do not contain MSG or hydrogenated oils.

Thirdly presentation can be everything. Don't toss the new crackers that actually contain whole wheat at them and say, "I know these aren't the best but just try them." Get excited to try the items with them. Arrange them on a platter with some hormone free cheddar cheese and sit down with them to enjoy an afternoon snack. Which brings me to my fourth tip and that is to lead by example.

Now for my fifth tip do not change every single item in your household at once if you are dealing with older children. If you change every single item at once they are likely to become bitter towards the idea of eating healthy. Remove your worst offenders first, such as items containing MSG, hydrogenated oils, and refined sugars. Use a variety of foods, don't just continuously try to shove broccoli down there throats over and over. Have fun creating meals and enjoy watching your children grow into healthy young adults.

  • Deforestation: Raising animals for meat results in the levelling of huge swaths of forests around the world. Trees are a major carbon sink (not to mention their many other environmental benefits), so cutting them down reduces the planet’s ability to absorb carbon dioxide.
  • Agricultural greenhouse gas emissions: Eighty percent of all grain products grown in the US are used to feed livestock. Conventional farming methods involve large doses of petroleum-based chemicals (fertilizers and pesticides) as well as the operation of heavy machinery which burns a proportionately large amount of fuel, emitting a lot of carbon dioxide.
  • Enteric fermentation: As ruminating animals (cows, sheep, goats, and buffalo) naturally digest their food, they produce a potent greenhouse gas: methane, which is more than 20 times more effective at trapping heat in our atmosphere than carbon dioxide. According to the UN’s Food and Agriculture Organization, eating meat is responsible for 37% of methane, 9% of all carbon dioxide, and 65% of nitrous oxide—all of which are greenhouse gases.

12 Foods to Eat Organic

5. Green Beans: At least 60 different pesticides are used on green beans. Even beans used in baby food have been found to be contaminated.

6. Strawberries: Eat organic ones while they are in season from local organic farms or buy frozen organic strawberries from your local whole foods market.

7. Green and Red Bell Peppers: These excellent sources of Vitamin C are contaminated with pesticides. Buy these organic. Or, you can buy organic seeds and grow your own.

8. Corn: Corn doesn’t really have that many pesticide residues. But 75 to 90 percent of all domestic corn has been genetically-modified, and the average American eats 11 pounds of it. Also, most cooking oils include corn oil, and so many foods are sweetened with corn syrup. Eat local organic corn in season and freeze some for later.

9. Bananas: This tropical favorite isn’t ripe for very long and has a very long distance to travel to market. These two factors combined, leads to a lot of heavy chemical dousing during the process.

10. Cherries: These rich pieces of fruit are heavily doused in poison. Make sure that the cherries you buy are organic and clean for the best and sweetest taste out there.

11. Cucumbers: By the time the cucumbers in your salad have traveled from the farm to the plate, they are intoxicated with pesticides. Buy organic cucumbers to avoid eating pesticide-filled cucumbers.

12. Celery: Very much laced with pesticides that have been sprayed onto them from their first conception, cucumbers are definitely one vegetable that you should buy organic.

Quality Chocolate

Chocolate is made from cocoa pods grown on the Theobroma cacao tree, a small evergreen native to the tropical regions of South America. It was so highly prized it was called ? God?s food? The secret to the best quality chocolate is in its amount of cocoa solids (a mixture of cocoa mass and cocoa butter).

The cocoa bean develops its aroma during fermentation and gives the beans their familiar chocolate taste. The fruit pulp containing the cocoa beans is poured into a fermenting tub or placed between banana leaves. Fermentation begins at 100 -120°F.

After harvesting the cacao pods (which contain the cacao beans) the pods are crushed and left to ferment and dry for about six days. Then the beans are removed from the pods and left to further dry. Quality chocolate demands this slow drying process.

Some chocolate manufacturers prefer to buy beans; others opt for chocolate mass. The beans are heated to 70 C and pressed to extract the cocoa butter (48-51 percent), which is clarified, becoming yellow and clear. At this stage, lecithin is added to make the mass malleable.

After blending, the cocoa beans are roasted. It is the process of roasting the cocoa beans that brings out the chocolate flavor and aroma (I can tell you from personal experience that this process also produces one of the most lovely aromas my nose has ever smelled).

Next the cocoa beans are shelled, and the pieces of seeds (called nibs) are then ground until a chocolate liquor is produced. Extra cocoa butter is then added (when producing cocoa or sweet ground chocolate it is removed). he extra cocoa butter increases the delicacy of the chocolate, and is largely responsible for its flavor.

First you will discover the differences in colour as different beans produce finished chocolate with varying colours from rich reds and coppers to dark browns. This is not a sign of quality and a common myth that the darker chocolate is somehow a better chocolate is certainly not the case.

A premuim quality 62% cocoa chocolate is crafted from the finest Ghanaian cocoa beans to produce a medium bittersweet chocolate. The largest suppliers are African countries, although the best (Criollo) cocoa beans originate in Ecuador. Forastero beans are flat and mostly used for chocolate drinks, violet-coloured Amelonado is bitter and of superior taste.

Some chocolate is best for eating, and some for cooking. Some types, like couverture chocolate, can be used for baking, eating or coating candies. This is usually considered the highest quality chocolate, and it has a high percentage of cocoa butter, making it smooth and easily tempered.

Flavanol antioxidants occur naturally in some plant-based foods, such as tea, grapes, blueberries, cranberries and cocoa beans. Cocoa beans are the basic ingredient of all chocolate products. Interestingly, it is one of the most concentrated natural sources of flavanol.

Semisweet or Bittersweet - Here, the chocolate liquor has been combined with sweetener, cocoa butter, and often vanilla. This is often known as dark chocolate and contains at least 35% chocolate liquor (or “cocoa”). Most good quality chocolate has around 50-60%.

Couverture is a special kind of chocolate. Couverture chocolate has more cocoa butter than normal chocolate, anywhere from 34% to 39% for a really good brand. This type of high quality chocolate is used as a coating for things like chocolate truffles.

Checklist – 7 Steps To Stop Sugar Cravings

Everyone has a craving at one time or another for some type of food. While having a craving is not a bad thing, in and of itself, what it leads to can cause stress and strain on the body that leads to disease and illness. One such craving is that for sugar.
To many people, sugar seems rather harmless but further research will show that it is a dangerous substance that causes havoc on the body. Sugar is a major craving for many people. With that said, how does one stop a sugar craving so that it does not get out of hand?

1.  Stevia - The main thing you can do is not use sugar. If you don’t enjoy unsweetened foods, add a touch of the sweet herb Stevia or agave nectar to cereal or drinks. These are both very good all natural substitutes for sugar and they taste good too.

2.  Protein - Sometimes when your body craves sweets it is a cry for something else, like protein. So try increasing your protein intake. Keep in mind that this is not true for everyone so, if having a bit of tuna or other protein does not help, then you need to consider other options.

3.  Processed Carbs - Avoid processed carbohydrates. Items like white bread, white pasta, and white rice which are quickly converted to blood sugar, disrupt the body’s metabolic balance and fat-control systems. Processed carbs tend to make the body want something sweet and keeps it hungry as well.

4.  Wait 10 Minutes - When a craving hits, wait about 10 minutes. While you wait, do something else like take a walk, grab a magazine and read that article you have been meaning to read, make a phone call and jabber for a few moments; do anything but grab those sweets.

5.  Eat Whole Foods - Eat more whole foods. Fruit and vegetables, legumes, nuts, and whole grains contain some naturally occurring sugars, but they also offer dietary fiber and important nutrients to help balance blood sugar.

6.  Substitute Whole Fruits for Sweets - Substituting whole fruits for sweets really helps. The sugars in fruits are digested differently than the empty calories of white sugar that are in most sweet foods. The fiber in fruit also slows the absorption of the sugars so you don\'t get as high a sugar rush followed by a low sugar crash.

7.  Remove Temptations - Remove the temptations for your kitchen. Throw out all refined sugars, candies, cookies, pastries, artificial juices and anything that resembles sweets that are not whole and natural.

Sugar cravings are not good and in no way should one think that they are ok. However, you don’t have to beat yourself up if you are having a hard time getting rid of your craving.
Cravings are not easy to overcome. As with any addiction it is a process. However, if you want to rid your body and mind of any craving, it can be done. Your job is to take it one day, one step at a time and to just do it. Arm yourself with the knowledge you need and don’t just read it but apply it to your life as well.

Cane Sugar and Migraine

One of the common food triggers identified by the 1979 Lancet study on food intolerance and migraine, was cane sugar(1).

The correlation between migraines and cane sugar or refined sugar consumption has been exhaustively covered in many migraine forums, and sugar remains on the top ten most wanted list for migraine triggers. One German biochemist claims to have cured himself, and others, of migraine just by avoiding cane sugar(2).

Sugar sensitivity is not always strictly an allergy - however, often the connection between migraine and sugar is actually that the sufferer's blood sugar is either too high or too low. Diabetics report severe migraines in cases of a "dump" of sugar into the system, supporting the fact that migraines can be triggered by sugar, even if it is not due to a 'sensitivity' as the term is commonly used. Hypoglycemic patients report even more instances(3).

One Italian study compared insulin sensitivity in 30 patients with migraine with 15 healthy comparison subjects. After drinking a high-sugar beverage, participants were monitored to detect changes in previously steady blood sugar levels. The levels in the migraine patients stayed higher than those of the control group for three hours after the test; other indicators showed that insulin sensitivity was impaired in the migraine group.

An interesting point to be made relates cane sugar sensitivity to reports of migraines caused by MSG. The flavor enhancer and meat tenderizer, widely found in many foods, but most commonly associated with "Chinese Restaurant Syndrome", has long been thought to be a culprit in the migraine trigger family. Many people do not know that MSG is commonly made using cane sugar, so it's quite feasible for it to be a migraine trigger(5).

If sugar can be deleted from the diet for a period of two to four weeks, then reintroduced in a controlled test, then it may be possible to pinpoint if it is causing a problem. Recording levels of blood sugar and plotting them against migraine attacks could be an interesting exercise. Like any food sensitivity, cravings for the trigger often occur, and rebound migraine is also a possibility.

OXIDATIVE STRESS

Black pepper contains several powerful antioxidants and is thus one of the most important spices for preventing and curtailing oxidative stress. In addition to their direct antioxidant properties, several of these compounds work indirectly by enhancing the action of other antioxidants. This makes black pepper particularly valuable in minimising the damage caused by a diet rich in saturated fats, one of the main causes of oxidative stress.

The high levels of cholesterol and triglycerides associated with oxidative stress inhibit the efficacy of important antioxidants like glutathione, superoxide dismutase, catalase, glutathione peroxidase, vitamin C and vitamin E. However, in the face of this potentially destructive process, black pepper actually maintains and enhances the levels and efficacy of these important antioxidant compounds.

IMMUNOMODULATION

Black pepper exhibits immunomodulatory properties and is capable of boosting the number and the efficacy of white cells, thereby assisting the body to mount a powerful defense against invading microbes and cancer cells.

BIOAVAILABILITY ENHANCEMENT

Piperine increases the bioavailability of valuable phytochemicals present in other spices and can boost the activity of biochemically active compounds contained in green tea, curcumin and a variety of other spices by up to several hundred percent, depending on the molecule concerned.

It does this via two principal mechanisms. Firstly, it promotes the rapid absorption of certain chemicals from the gastrointestinal tract, protecting them from being broken down by chemicals in the intestinal lumen and by enzymes that occur in the cells lining the intestines.
