Oaxaca Culinary Tour Success Suggests More Gastronomic Opportunities

The accolades tell it all:  "I had a terrific and very inspiring time in Oaxaca. Your knowledge of the culture and region introduced us to so many interesting people, all willing to share their passion, whether it was for pottery, wood carving, frothy chocolate, the best moles or natural dyes" [Elizabeth Baird].

Elizabeth Baird, one of the foremost Canadian culinary icons of our time, was a participant in the May, 2010, Oaxaca Culinary Tour.  So was prolific cookbook author and columnist Rose Murray, who endorsed a copy of her seminal work, A Taste of Canada, A Culinary Journey, with similar praise: "Thank you for sharing your vast knowledge of Oaxaca with us.  We know it through your eyes."

If the foregoing is any indication of the success of this most recent tour, then the thought of what's in store for participants in future, similarly organized Oaxaca culinary events, should titillate anyone interested in Mexican gastronomy – chefs and foodies alike.

While numbers were small (May is when most Americans and Canadians are content to stay close to home, stow their winter attire, and begin gardening), organizers provided the 8 – 10  participants in each of  the week's daily activities with all that the tour promised, and more:  cooking classes with Pilar Cabrera and Susana Trilling, dining at renowned Oaxacan restaurants Casa Oaxaca, Los Danzantes, La Olla and La Catrina de Alcalá, and what impressed the most, getting out into the villages and learning the secrets of local recipes through hands-on instruction from indigenous natives – in their kitchens and over their open hearths and comals.

Green Tea - Expensive Scam or Elixir of Longer Life

Have you ever wondered why green tea costs about $2 for a packet of 25 tea bags, whereas with good old common or garden black tea, you can get about 200 bags for under $3!

Seeing as how most tea originates from the same tea plant (Camellia sinensis), is there a good reason for this, or is it just some scam dreamt up by a marketing genius in a back-room somewhere (wearing a big fat grin!).

But Green Tea is supposed to have such a wide and powerful range of health-inducing properties, and in fact is reputed to even act as a remedy for cancer, heart disease, high cholesterol and many other harmful ailments. So, how is it the black variety of tea seems to have none of these properties, and even has high caffeine content, even though the tea all stems (sic) from the same plant?

Now having been to Sri Lanka, and tasted tea almost straight from the plant at a tea plantation, I am aware that the flavour and health content of tea is directly related to the processing that takes place before it gets to your cup.

Well, the answer is in the method used to produce the tea. Black tea is fermented first before being processed, whereas Green Tea is not. It is picked and then dried, a process that is a lot shorter, that gives green tea a lighter flavour than its black counterpart. More importantly, many of the beneficial chemicals tend to remain intact, which gives green tea its amazing healthy actions.

Now, green tea is usually drank by itself, without milk or sugar, and to the uninitiated, the taste is nothing like black tea. I find that green tea on its own has a pleasant, but 'burnt' taste, and has to be acquired. Once again, if you have been looking for healthy replacements for ordinary tea or coffee, you may have sampled plain hot water or hot water with a slice of lemon in it as a 'wake up' brew. Green tea, after the first few mouthfuls the first time you try it, has a much stronger and quite pleasant taste.
With a speciality drink like green tea, the method of brewing to extract the best, and most consistent taste, needs to be a bit better controlled than with your common or garden black tea bag. You should boil the kettle, wait for a few minutes before pouring the water on the teabag (one per china cup), then let it diffuse for another three minutes.

Protect Your Teeth - Drink Green Tea

Dental health is important to all of us. We buy special toothpaste, mouthwash, dental floss and rinsing agents to help ensure that our smile is white, our teeth are cavity free and our breath is fresh. But, did you know that drinking tea may be one of the best (and simplest) things you can do to protect your teeth?

Well, it's true. Tea has been shown to offer protection to our teeth. Tea is a natural source of fluoride, which is known to protect against tooth decay. This is great news for children, who need significant amounts of fluoride in order for tooth enamel to harden properly. When teeth harden properly in our youth, it protects us from cavities throughout our lives.
However, even for adults, whose teeth are fully formed, tea's fluoride is a great way to protect your teeth. The fluoride found in tea has been shown to inhibit the growth of glucosyltransferase. This substance helps the plaque that naturally forms to adhere to our teeth.

Dentists in the UK have also reported that black tea disables certain forms of bacteria that work with sugars to form clumpy aggregates that stick to teeth. These dentists believe that drinking black tea reduces the total mass of dental plaque.

In addition, one study has suggested that green tea may inhibit the enzyme that causes plaque to form in the first place. Plaque is formed when an enzyme in your mouth mixes with sugar in the food you eat.
This study, reported by the UK Tea Council, looked at a sweet drink offered by a gourmet coffee house. This drink included sugar and whipped cream, but also included green tea. When the teeth of those who consumed this beverage were evaluated and compared to those who consumed heavily sweetened drinks that did not include green tea, the results were significant.

Even when the participants consumed the same amount of sugar, those whose drinks contained green tea did not have the same amount of plaque formation as those whose drinks were made with something other than green tea, leading researchers to conclude that green tea has a cleansing effect on the teeth.

History Body Sugaring

Sugaring began hundreds of years ago by the Egyptians. As deodorants and soap were not available, they found that their underarm and pubic hair they could stay fresher and cleaner. So they developed sugar paste, so sugaring is the oldest most natural form of hair removal.

It is a safe and natural way to remove unwanted hair and is now used by modern men and women as part their beauty routines. It is a popular alternative to waxing.

Imagine your hair was a lawn. Shaving simply cuts the growth back and encourages new stronger growth!!!

All about sugaring

Sugar paste is made of sugar, lemon juice and water. It is 100% natural, not tested on animals and is environmentally friendly. It contains no chemicals.
The product is a blend of natural ingredients therefore eliminating the possibility of any harmful side effects.

It is gentle on the skin. This is because it is water soluble, applied warm (not hot) and it doesn't stick to anything moist. Therefore it doesn't stick to the skin or live skin cells, only the hair, with the hairs pulled cleanly from the roots unbroken and without bruising the surrounding area. This is less traumatic for the skin and therefore less painful than waxing. This method is good for people with sensitive, dry or older skin and for those with eczema.

It is suitable for all skin types and may improve eczema and psoriasis by removing the top layer of dead skin and encouraging the healing of the skin underneath.

Sugar paste is applied to the skin and then flicked off. It removes the hair from the root. Because of this re-growth is slower, finer, softer and lighter in colour and can lead to gradual diminished hair growth. This is because each hair follicle is programmed to produce a certain number of hairs in its lifetime. By removing the hair from the root the follicle is stimulated to produce its next hair more quickly than it would have done if the hair had been shed naturally. The follicle then gets through its programmed number of hairs more quickly after which it will stop producing a hair.

As dead skin is removed, the skin is left soft, smooth, healthy looking, clearer looking and revitalised, and stubble free for a few weeks.

Constipation and High Blood Sugar

Most people experience constipation at some point in their life. They make a note to eat more fiber and expect everything to go back to normal in a day or two. Luckily, for the better percentage of those inflicted, this method works. Not so lucky are the ones who are battling something much more serious than the occasional bout of constipation.
Constipation is a condition that can be very difficult to find the originating cause. There are so many different causes, from medicines to lifestyle changes, that pin-pointing the true cause of the constipation can be like finding a needle in a haystack.

One potential cause that medical experts are looking very closely at is the relation of high blood sugar and constipation. What effect does blood sugar have on the digestive system? Are diabetics at higher risk for constipation?

As it turns out, diabetics are definitely more at risk of experiencing constipation. Nearly 60% of all diabetics also suffer from constipation. Abnormal blood sugar levels can negatively affect many of the body’s systems and functions. When blood sugar levels are elevated, the nerves in the intestines that control the length of time waste stays in the body can be seriously damaged. The nerves can’t do their job properly and food waste begins to build up in the intestines. This doesn’t happen over night, of course. This condition affects type 1 diabetics who have been using insulin for a number of years.

Another disastrous effect high blood sugar has on the gastrointestinal system is Gastroparesis. Gastroparesis is when nerves in the stomach are damaged to the point that they can no longer work properly. The stomach doesn’t know when to send the food through the digestive tract. Up to 75% of diabetics also have Gastroparesis.

Don't Let Them Stop you From Kicking your Sugar Habit

The one thing that stops the more people from committing to a sugar-free diet than any other cause is the fear of sugar withdrawal symptoms. Don't let that stop you - sugar addiction's withdrawal symptoms, compared to many other addictive substances, are quite mild, so giving up an addiction to sugar and other refined carbs is fairly easy. It's staying "clean" afterwards that's hard.

Other drugs, such as tobacco (and even caffeine) have far longer and more disturbing withdrawal symptoms. During the first few sugar-free days you may experience headaches, fatigue, depression, drowsiness, skin eruptions, and mucus or throat discomfort.

Some of these symptoms, especially the mood swings, fatigue and drowsiness, probably occur on a daily basis when you're still eating a high-sugar diet, as the blood sugar rises and falls - but you don't usually blame it on the way you eat. When you kick the sugar habit you will be very aware that these symptoms are being caused by your recent dietary change, and you should look forward to the day when you will be completely free of them.

A caffeine withdrawal headache might be quite painful, and can last for 2 days or more, while sugar withdrawal symptoms are usually milder but may last for a week or two. Some people may experience little or no discomfort at all, and will simply receive all the benefits of a no-sugar diet almost immediately.

How to Increase your Fat and Sugar Burning to Aid Weight Loss

In order to carry through a successful weight reduction process, your over-weight must be attacked from several angles at the same time. Among other measures, you also have to increase your burning of fat and sugar. This burning is also of two kinds. The body are steadily burning fat and sugar and thereby producing heat, and it burns these nutrients to get energy for the daily activities you perform. The aim in a slimming process is to increase both these burning processes. In the terminology often used about slimming, this is often called "increasing your energy levels".

A. THE FAT AND SUGAR BURNING PROCESS
The burning of fat and sugar is composed of many chemical steps. Fat is first broken apart yielding free fatty acids. The fatty acids are then broken further down to pieces called acetyl. The sugar is also broken down to acetyl in a process called glycolysis, and the energy thus released is used to produce an energy-rich compound called ATP. The acetyl formed from the braking down of fat and sugar is then further combined with oxygen yielding carbon dioxide and water, and even more ATP is produced. The ATP produced is then used to release heat and to give energy for the bodily work.

B. GET ALL THE NUTRIENTS YOU REQUIRE
The process of braking down and burning fat and sugar uses vitamins, minerals and essential fatty acids as working tools. Therefore your diet has to contain all these nutrients in the needed amount. Including vegetables or fruit in a natural form in every meal will help you get these nutrients.

Even though your generally shall reduce your fat consume, some types of food containing essential fatty acids should be a part of your daily diet, for example nuts, almonds, sunflower seeds, olives, olive oil and fat fish.
Extra supplements of vitamins, minerals, essential fatty acids and lecithin can also be of help.

Five Ways Not Eat Sugar From Your Diet

1. Cut out the sugary sodas. Regular sodas contain sugar and high fructose corn syrup, and some studies have shown one regular soda a day will add 15 pounds a year. As well, sugar will make you thirsty. Drinking more soda to slake your thirst will only increase it. Diet sodas may have no calories, but the sugar alcohol turns to fat if your body does not use it, so it's best to limit the diet soda to one or two a day.

2. Eat some fresh fruit every day. If you drink fruit juice to meet your daily total of fruit once in a while, you might be okay, but don't make a regular practice of it. What you drink absorbs quicker than what you eat. In addition, some fruit juices contain extra calories and sugar. Eat some grapes or an orange instead of juice. Fruit has natural sugars that will satisfy your sugar craving without overdoing it. If you eat some fruit, it will help to fill you up and satisfy you longer than fruit juice will. Plus, you get the fiber most juice doesn't have.

3. Begin your day with a bowl of oatmeal. Pre sweetened cereal may provide you with a speedy breakfast, but you'll need to eat a ton of it to hold off until your morning snack. Have a bowl of oatmeal instead. While oatmeal doesn't always have an appetizing effect on us, it's terrific for sticking with you. Oatmeal offers more protein and fiber than cold cereals will keep you going all day. Steel cut oatmeal is best.

4. Eat a handful of nuts. While nuts are high in fat and calories, they have lots of protein, vitamin E, fiber, and omega 3 fatty acids, depending on which nut you choose. Nuts have the added advantages of filling you up, so you won't be hungry, and they are natural mood boosters. Be careful not to eat too many - I eat a handful or at most an ounce. Walnuts have the most Omega 3's.

5. Avoid sweet treats in the workplace. Look around in any office: what do you see? There is always one or two people that has a jar of chocolate candy or hard candy sitting on their desk. Your boss might bring fattening and sugary snacks and donuts on special occasions or just to butter you up. Steer clear of the office snacks. All of this extra sugar just adds to your bottom line. Eating your breakfast at home can ward off your desire for that extra sugar in the morning. Keep your own stash of healthy snacks in your desk so you do not feel the need to treat ourselves elsewhere.

High Blood Sugar Is Dangers

Insulin is the hormone that injects blood sugar into your cells giving you instant energy. That is why eating fast acting foods, processed food with added sugar and made with refined flour, spikes the blood sugar. This will cause the body to produce insulin. With the body producing extra insulin, it will cause the blood sugar to drop too low therefore, zapping your energy.

When eating fast acting foods such as bagels or doughnuts the body goes into production and produces more insulin. This will cause the blood sugar to drop causing an energy loss. The body responds with mood wings, mental fuzz and memory lapses. This cycle must be repented about every two hours. These highs and lows are not good for the body.
High blood sugar causes diabetes and affects the kidneys, nerves, eyes, heart, and brain. It will trigger inflammation which can lead to heart disease and possibly cancer. It also elevates cholesterol and triglycerides.
Eating the right foods can help prevent high blood sugar. A Brazilian study found that women who ate three apples a day maintained lower blood sugar levels than the women that did not. Women who eat one apple a day are 28% less likely to develop type II diabetes.

Drinking Apple cider vinegar before a meal will help to lower the blood sugar. Water soluble fiber supplements enhance blood sugar control such as guar gum, psyllium, glucomannan, seaweed fibers and fenugreek seed powder or fibers. Keeping the blood sugar level is likely to delay or possibly prevent diabetes.

Coffee From Sumatra

In the past, the only known ways of  processing coffee are by drying the coffee bean while still in the fruit (dry method) and by removing the fruit from the bean before it’s dried (washed or wet method). Sumatra coffee follows a modified process. After picking, the coffee skins are removed then they will be subjected to an overnight fermentation with the absence of water thus calling the procedure dry fermentation. Afterwards, they will be washed in water to remove the pulp and then set for drying. (In a nutshell, Sumatra coffee undergoes the two procedures.)  However, not all pulp can be removed by mere scrubbing giving the coffee a ferment taste.

The 18th century marked the start of the production of coffee in Indonesia which became first in the northern part of Aceh. The coffee production is widely done in region of Lake Toba and its sub-regions.

Gayo Mountain Coffee

This Sumatran coffee is grown in the Gayo mountain region. The abundance in rainfall, an altitude of 1100-1500 meters and the fertile soil make the region perfect for growing coffee thus making coffee the primary source of income of its people. Gayo Mountain Coffee is best described for being clean and sweet.

Sumatra Mandheling Coffee

Named after an ethnic group in Indonesia, Mandheling is one of the favorites of coffee drinkers all over the world. Hailing from the west coast region of Sumatra at high altitudes, this variety is mildly acidic unlike the other coffee varieties. Truly, Mandheling coffee is Indonesia’s pride because of its complex tastes and flavor.

Kopi Luwak Coffee

Possibly the rarest thus making it really expensive; this coffee is indeed rich, full-bodied with a strong flavor. The way it is produced contributes to its rarity. This coffee originates from Java, Sumatra and Sulawasi. The mammals called Asian palm civets are responsible for the production of Kopi Luwak. They eat the reddest and ripest coffee cherries which will be fermented during digestion by the enzymes in their stomachs. This process reduces their bitterness and leads to the formation of malt. Once excreted by the palm civets, the bean-like waste is collected and processed.

In general, coffee is very rich in taste and aroma. So is, Sumatra which brags of highly coveted coffee varieties which every coffee drinker will surely enjoy.

Organic Pet Food

What is Organic? Organic refers to environment-friendly farming methods using no artificial pesticides, fertilizers or chemicals to produce the purest and most natural foods possible. Organic, earth-friendly farming practices promote the sustainable value of our natural resources and produce beneficial nourishing foods for our families and companion pets.
Since the advent of grocery store commercial dog food, there has been an explosion of pets dying from tumors, growths, cancers, and diseases that were unheard many years ago.

I truly believe this has been caused by the unhealthy chemicals, pesticides, hormones, fats and preservatives used to make this cereal based kibble palatable and long lived. Can you imagine eating a dry, cereal like, tasteless food every day, that in fact can sit on the shelf for years and not spoil. Obiously there are heavy duty chemicals and preservatives used to extend the shelf life. It's like eating sawdust with a chemical enhanced flavor, to cover up all the harmful additives.

Changing to organic dog food, whether it is home made organic, with the same all natural ingredients you eat for supper, or buying the premium high grade organic dog food that has become increasingly popular, is the best you can do for your four legged companion. An organic dog food marked 95% organic meets the same guidelines as organic food produced for humans. The food won't contain pesticides or antibiotics, and it's preserved with natural substances like Vitamins C and E. Organically certified pet food is more costly, just as our own organic food is more expensive, but the advantages of superior pet health and helping our environment is worth it to most of us. Organic dog food will say it is using certified organic ingredients, and should say which agency has done the certification.

Textiles Organic

By the end of 2008, the sale of organic textiles worldwide is expected to exceed $3 billion indicating that global demand for organic textiles is increasing in response to consumer demand. Organic production takes more time, requires more skills and knowledge, and at least for now, costs somewhat more. But it is worth it as organic materials do not contain any hidden costs to the environment.

Choose Earth Friendly Products! Choose Organic!
The consumption and use of green technologies is all about the challenges and choices we face if we are to enjoy a high quality of life within the limited resources of our world. If we become passionate about sustainability, together we can make the planet a cleaner and healthier place for all of us to live.

Do you wish to embrace a lifestyle that protects our children’s future? Do you want to to live in the greenest environment possible with a conscience and respect and appreciation for the earth? The quality of life for future generations is dependent on the choices we make today!
Surveys reflect that about a fourth of the US adult population has a profound sense of environmental enlightenment and social responsibility. Almost half of us will buy organic and make earth friendly choices in many aspects of our daily living. Consumer education and awareness is a powerful force for change.

The consumption of organically grown products has increase by 20 per cent in the last year alone. Organic alternatives are readily available and the trend is escalating. Sustainability should be within everyone’s reach. Our choices matter and have a long term global impact. Let’s Choose wisely!

Organic Skin Care And Personal Products

Skin care and cosmetics are the least regulated products under the US Federal Food, Drug and Cosmetic Act. Whether it is soap, moisturizers or deodorants, skin care products are an essential part of daily life. But do we really understand what these products actually contain and what we are forcing our skin to absorb?

Have you ever suffered from stinging, burning or itchy skin? Chances are that your skin absorbed irritants and toxins from your skin care products. The skin absorbs ingredients in all the personal care products that come in contact with our skin. Consider nicotine or HRT patches. They rely solely on skin absorption.

As mothers we are always concerned for the well being of our children. We tenderly comfort and bathe them with a wide range of products. These include soaps, shampoos, creams and lotions, many of which are used on baby’s tender skin several times a day. The skin is the largest organ of the body and the delicate skin of an infant can be up to 100 times more sensitive and receptive to toxic chemicals and irritating ingredients that the skin of an adult.

Without even realizing, parents put their babies at risk daily. Did you know that applying baby powder to your baby’s skin may pose a cancer risk later in life? The principle ingredient in many baby powders is talc, which several medical studies have confirmed as a known carcinogenic.
Lanolin is a main ingredient in many personal care products and when processed from organically raised sheep, is a wonderful healing balm. The danger lies in non-organic lanolin that has been processed from sheep that were dipped or sprayed for lice with chemical pesticides that are contaminated with carcinogenic ingredients such as DDT, dieldrin or lindane. The residue of these toxin remains in the processed lanolin and can cause severe reactions and long term health hazards.

Chemical free and natural, organic products offer earth friendly options that eliminate these dangers. You can avoid these and similar safely concerns by using only certified organic products formulated from natural sources such as plants, fruits, vegetables and flowers. These products to do not contain synthetic chemicals such as lauryl sulphate, phthales, parabens, artificial fragrances or dyes.

Organics And The Environment

The USDA estimates that within the next ten years half of all America’s farm products will come from only 1% of the farms. The EPA also states that commercial agriculture is accountable for 70% of the pollution in our country's rivers and streams. Small-scale organic farmers finance innovative and far reaching research designed to minimize agriculture’s impact on the environment. They preserve bio-diversity by planting heirloom varieties of plants and harvesting seeds for future crops. The loss of a large variety of species is one of the worlds most pressing environmental concerns. The good news is that many organic farmers and gardeners have been gathering, preserving seeds and growing unusual and unique varieties for decades.

Organic farming methods naturally enrich the soil with manure and compost. Well balanced soils product healthy, strong plants, nourishing for both people and animals. Organic agriculture can be a lifeline for small farms as it offers an alternative market where sellers can command fair and equatable prices for crops. Organic farming may be one of the last ways to assure the survival of both our ecosystems and our rural farming communities .

Conventional farming endangers farm workers and their families. Scientific research confirms pesticide-related health problems which include cancer, birth defects, memory loss, paralysis and death. Unsecured storage, improper application methods and unsafe handling and transportation procedures are not at all uncommon and often lead to tragic mishaps. As pests develop resistance, farmers desperate to maintain or increase crop yields often resort to more and more applications of expensive and stronger chemical products. Facing rising costs, depleted fields and contaminated ground water, many small farmers have been forced to abandon their livelihood.

Organic farming, on the other hand, is not only safer and healthier for farmers, but also promotes just compensation in the supply chain. Organic farming provides an economically viable and socially acceptable alternative to large-scale farming and the accompanying dependence on government crop subsidies. Support of the small farmer supports America’s economy.

Organic production dramatically reduces health risks. Many EPA-approved pesticides were registered and approved prior to extensive research linking these noxious chemicals to cancer and other significant health problems. Crop dusting has often resulted in drifts of toxic pesticides from fields to residential areas.

Organic agriculture is one way to prevent more of these chemicals from contaminating the earth that sustains us. An increasing body of research indicates that pesticides and other contaminants are considerably more prevalent in the foods we eat, in our bodies and in the environment than we previously believed.

By choosing organic products we lessen this toxic burden. Organic farmers regularly rotate crops and plant cover crops to control weeds, nutrient leaching and erosion. Soil is the foundation of the food chain. The focus of organic farming is to use methods that build and maintain healthy and sustainable soils.

Choose Organic for Your Green Lifestyle

More and more people are electing to avoid the risk of chemical contamination of their bodies, families and homes. Fortunately, solutions for addressing change exist and are within easy access. Choosing eco-friendly alternatives allows us to live a natural, green lifestyle.
The benefits of organic bedding, eating organic foods and wearing organic clothing are numerous. Organic Foods The Organic Food Association tells us: “It's common sense; organic food is good food. Good to eat, good for the environment, good for the small-scale farmers and farm workers who produce it.”

Organic farming is all about health and wellness. In order to assure optimum health and resistance against diseases, the natural balance in our own bodies and in the environment must be maintained. The use of artificial chemical pesticides, fungicides, herbicides, fertilizers, genetic engineering and drugs interfere with this delicate balance; with unknown and often harmful consequences! This is why organic farming impacts on much more than what can be tasted or seen.

Over the last fifty years, commercial farmers have, of necessity, continued to increase the amount of these hazardous applications. Cereal crops are sprayed as many as 8 times during the growing season. Many fruit and vegetable harvests have been sprayed 10 - 15 times. After harvesting the spraying process is repeated to inhibit grow of bacteria during storage and transport. Excessive spraying of fruit and vegetable crops destroys natural bacteria, leaving the plants increasingly vulnerable to attack from unwelcome pests or disease. More over insecticides and fungicides are then required to fight off infestation and decay. However, these pests rather quickly become immune to the chemicals applied and their population increases rapidly. More powerful and increasingly toxic chemicals are then required.

Buy foods in season and encourage your supermarket to stock locally grown items, which are less likely to be waxed and treated with postharvest pesticides during transport and storage.

2. Scrub Up
Wash all the fruits and vegetables with a dilute solution of dishwashing liquid and water. Use a vegetable brush. Chop spinach, broccoli, cauliflower and celery before washing.

3. Grow Your Own
No matter where you live, you can grow at least some of your own fruits and vegetables organically. If you do not buy organic, you can still minimize your exposure to pesticides by heeding the above suggestions.

4. Do Some Research
Contact your state agriculture department or local extension service for referrals to organic growers in your area. Contact the farmers and ask how they grow their produce and where they sell it.

5. Meet Your Greengrocer
Talk with your health food store or supermarket produce manager. Ask for organic produce.

6. Buy Your Produce By Mail
It is easier than you think. Pick those nearest to you for the freshest items and lowest shipping costs. Root vegetables – carrots, turnips and rutabagas – are excellent mail-order choices. They ship well, and when conventionally grown, root vegetables tend to accumulate higher levels of pesticides than other vegetables.

7. Exercise A Little Skepticism
Unless you trust the vendor, do not place too much faith in handwritten signs. Look for certification label. Labels include “Farm-Verified Organics.” “Organic Crop Improvement Association,” “Organic Growers and Buyers Association” and “California Certified Organic Farmers.” Only California has a government-regulated organic certification program. The other certification labels are granted to members of voluntary associations who pledge to uphold certain voluntary standards. But any label is more trustworthy than a handwritten sign.

Transform Eating Habits

· Milk (non-fat or no-fat also) - is a mucus and acid forming food. Milk creates mucus in the body and makes the lymph liquid (we will talk about lymph later) in your body acidic, which attracts parasites and other pathogens. (In the place of milk almond milk or goats milk)
Cancer thrives in a body that is acidic.

o Bread - white bread is also acid and mucus forming. It is also more difficult to pass through the colon and gives rise to constipation.
Sugar the #1 food additive. Sugar is in most of all the products that you buy.

· Sodas (regular or diet)- are extremely high in sugar or artificial sugar - 7 teaspoons per can. Most people drink over 35 gallons per year. Sugar is a body poison and leads to many disease - diabetes, obesity, tooth decay and osteoarthritis and so on.

o Sugar, also, depletes your B-vitamins and calcium and magnesium from your bones and teeth.

o In addition, since sodas are in aluminum cans, aluminum can go into the soda because most sodas contain phosphoric acid. Aluminum has been associated with senility and Alzheimer disease.

o Calcium is also leached from your body to neutralize the phosphoric acid. (Its healthier to drink juices of all kinds) There is just no way around it. Sodas suck health right out of your body.

· Regular salt (NaCl) - excessive salt intake is related to high blood pressure, edema, and imbalances in the minerals in your lymph liquid. Sodium, Na, in salt attracts water so the more sodium you eat that more water your body will hold. (Use sea salt, it has 25% less sodium, use low salt soy sauce, and herbs to flavor your food)

o Most people eat too much salt - over 10,000 milligrams per day. We only need around 200-300 mg per day.

o Excess salt is also in involved with kidney problems, cardiovascular disease, stomach cancer, and excess sensitive to stress.

o Get your Sodium from eating vegetables that are high in sodium. When you get your salt from vegetables it is organic salt, which does not have the same effect in your body as inorganic salt from a shaker. You need a lot of organic salt or Na in your body. Your stomach is a Na organ. It needs organic salt, Na, to keep its lining from being eaten by the hydrochloric acid in your stomach - an ulcer.

o Foods high in organic sodium are apples, apricots, asparagus, greens, red cabbage, carrots, celery, dulse, egg yolks, figs, fish, raisins, prunes, and lentils. For the next two weeks try adding the following foods to your eating habits.

· lecithin - is 30-40% choline, which is used throughout your body. This is why you want to include it in your diet.

o choline is one of the main chemicals in our cell membrane.

o It is used in our brains to create the neurotransmitter acytlcholine, which is required for thinking and memory. Consider lecithin brain food.
o It is used by the liver, which helps to prevent a fatty liver. A fatty liver prevents you from losing weight around your belly.
o it helps to break up fats into tiny goblets so that they are easily digestible and will reduce your cholesterol.

o it helps to keep cholesterol from clinging to your artery walls.

· flax seed oil - is an essential oil, omega 3. This means your body does not make it and it is necessary for you to eat it so that you can live without illness or pain.

o it helps to detoxify the liver
o it stimulates the production of bile. Remember that bile helps to breakdown fat so that the liver can better metabolize it.
o stimulates the body to burn fat.

o apple juice and apples - are high in vitamin A, in Potassium and have other minerals that strengthen the blood. They contain malic and tartaric acids, which keep the liver healthy and promote good digestion. Apples help you to lose weight by providing fiber and keeping you regular.
o fiber - you need 30-35 grams of fiber every day. Most people only get up to 10-15 grams. Fiber is one foods that reduce your transient time in the colon. Fiber helps to keep your colon clean, reduce cholesterol, remove toxins from your body and eliminate constipation.

Changing Your Eating Habits

Because all of us have been brought up eating junk food, well most of us, it is not easy to change our eating habits. Your eating habits have developed since childhood based on what your mothers or fathers cooked and what your psychological make-up was during that time.

The foods you eat and crave help keep pass trauma and present anxiety in check. Food helps make you feel good when you start to feel bad. Eating is a natural defense mechanism that the brain-body uses to keep you from going crazy.

So, you see, it is very difficult to change our eating habits. When we do, we start to feel bad. We start to feel uncomfortable, we feel pain, we have withdrawal symptoms, and we may feel sick. Is it any wonder that any of us ever succeed in changing our eating habits?

I consider every thing that has been packaged to be junk food. There are a few exception and you need to read ingredient labels carefully. Very few food manufacturers and even restaurants prepare food with your health in mind. Of course, they want to satisfy you, but they don't use foods that are in your best interest.

Most people eat junk food 85% of the time and then eat good food the other 15%. It should be the reverse of this - eat good food 85% and junk food 15% of the time.

To have better health, here are some foods to stop eating. Eliminate these foods over the next two to three weeks.

Planting Organic Food

When you garden organically, you can feel safer about the food you eat. You will know that the food you are feeding your family is safer and healthier than the questionable stuff you find in the grocery store. You and your family deserve to eat food that will not give you all cancer!
Organic gardening is also extremely beneficial to the environment for several reasons. For one thing, every time you spray your plants with chemicals, those chemicals wash off of your plants and onto the ground. From there, those chemicals wash down into the ground, and eventually make it into the groundwater!

When the insects on your plants are poisoned, they can be eaten by birds or other animals. These animals can then become sick and die. If the toxicity was high enough, any animals that eat those animals might also perish. This can have a very strong environmental impact.

By killing too many of a certain species of insect, you can also cause an imbalance in the local wildlife. If you and your neighbors kill off a large portion of the population of one insect, then anything that depends on that insect for food might also start to die off.

Then anything that depends on the second species for food might start to die. This could spin out of control if the problem became too widespread. This is unlikely, but it is not impossible. Organic produce is also known for its superior flavor.

For example, organic carrots are widely known for being much sweeter than traditionally-grown carrots. They do not have the same bitterness that other carrots can have. This is a very good reason to grow your produce organically, even if you aren not worried about the chemical effects to your body and the environment.

There are obviously a few drawbacks to gardening organically, too. You have to deal with pests differently, and it can be a longer and more complex process to rid your plants of certain pests. Instead of picking up some chemicals, you have to pick off insects by hand and drop them into soapy water.

You have to spray your plants with solutions made of things like hot peppers and garlic to prevent some bugs from eating them. It can be difficult. You also have to stick to organic fertilizers, rather than using easy chemical fertilizers.

But organic fertilizers can actually be cheaper, because you can make them yourself. Fish emulsion is a common organic fertilizer. It is a sort of tea made from dead fish. Seaweed fertilizer is another tea-like fertilizer that many organic gardeners swear by.

Organic Gardening

Organic Gardening is gardening without the use of man-made chemical pesticides or chemical fertilizers. It is said by some of its supporters to be more in harmony with nature. An organic gardener strives to work in harmony with natural systems and to minimize and continually replenish any resources the garden consumes.

The organic revolution is a global phenomenon witnessed in every part of the world. Global organic food market was about USD36.7 billion in 2006 and over 30 percent or USD13.6 billion of the global demand stems from the US, according to Datamonitor.

Organic food refers to food items that are produced, processed and packaged without using chemicals. Organic food is increasingly becoming popular due to its perceived health benefits over conventional food.
The organic concept is not limited to food items. Due to excessive usage of harmful chemicals in cosmetics, people are turning towards organic cosmetics also . One can often see organic skin care products, organic shampoos, organic soaps, and organic make up products on the shelves of organic stores.

Droves of people are turning to organic produce as a way to feel safer about the foods they eat. People are worried about the foods they put into their bodies. With all of the reports of food poisoning from fruits and vegetables, many people are worried about what they are eating.
We now know just how dangerous all of those chemicals that we spray plants on can be, too. Many chemicals have been banned because they were shown to cause cancer! But some of these dangerous chemicals have not yet been banned, and there may be plenty of hidden dangers that have not yet been discovered.

Consumer Behavior for Organic Food

In the past, it was wrongly presumed that consumer’s choice was spontaneous and instinctive. In fact, human behavior is the result of stimuli from environment, acting upon instincts, appetites and emotions. The consumer is said to be free to choose what goods he will buy and in what proportions he will by them. Consumers want to get maximum satisfaction to choose any of the goods and services. If we see the food choices of consumers, there is long term gradual change in this. Now consumers are more conscious about their health and they want nutritious and healthy food even for giving high prices. Table 1.1 shows in a schematic way the long term and differentiation of consumer preferences for food in a growing economy. The development may be divided into 3 phases-

Five Reasons You Should Eat Organic

Everyday we expose ourselves to dangerous chemicals, toxins, and pollutants by simply going about our daily lives.  What if a majority of that exposure came from the foods you ate?  Would you do something about it to reduce your risk of various health related issues?  Here are five reasons to benefit by eating organic everyday.

Probably the most significant reason of them all is to reduce the levels of toxins, pesticides, synthetic fertilizers, growth hormones and antibiotics you ingest by eating produce and meat that is certified USDA organic.  Not only are these substances harmful for the body but studies have shown that they increase your risk of a variety of cancers and a host of other health problems.  If you consume produce that is not organically grown one way to reduce your risk of pesticide ingestion is to peel your fruit or vegetables because most of the pesticides and chemicals don’t penetrate the skin.  The down side to peeling your fruits and vegetables is that a majority of the nutrient content is lost when you discard the skin.  It is also very crucial to choose organic dairy, poultry, and meat whenever possible due to the high levels of hormones and antibiotics detected in the meat.  If the animal is injected with these substances then you are also ingesting them as well.  You will increase your risk of cancer, obesity, birth defects, and weaken your immune system by eating animal protein that has been injected with artificial growth hormones.

The next important thing to note is that by consuming organic foods you are increasing the nutrient content of the food by about 50%.  With increased nutritional content your body will respond with more energy and a reduced risk of illness.  Something else to keep in mind is that food that has been organically grown is also richer in taste.  With over 10,000 taste buds on your tongue, sacrificing taste would be such a shame.

Going green is a big concern for out planet so by choosing organically grown food you are also helping to lower the negative impact that mass produced fruits and vegetables have on our earth. By choosing food without the use of pesticides, chemicals or toxins you are reducing the amount of pollution to our environment.  Organic farmers also use less energy and water to grow their crops and do not have the need to clutter landfills up with toxic waste.  Helping to save our planet is a big concern these days.  Supporting local farmers and growers is one way we can help do our part.
